      Charlottes opskrifter.

Augustas Fiskesuppe:

 

- 1 large onion (or 2 medium size)

- 2 garlic ribs

- 1-4 spoons Curry (depends on how strong the curry is, or how strong you want the soup)

- 1 can of chopped tomatoes

- 1 can of peaches (I use a large can, but it's a matter of taste)

- ½ - 1 bouillon (vegetable-, fish-, beef- or chicken-bouillon, also a matter of taste)

- 1 cup of water

- 1/4 L 38% cream (13-18% is fine as well)

- 500 g fish chopped in small pieces (any kind really, just the kind you like best)

- 200 - 400 g shrimp (lobster, crab, or whatever you prefer, however, not necessary)

 

NB: Make the soup in a large pot!

 

Start by frying the onion and the garlic in olive oil, and then add the curry.

The peaches are then chopped to small pieces and added to the soup along with the tomatoes and the juice from the peaches.

Water and bouillon added, stir for about a minute, then the cream.

Let it simmer for 15-20 min, before adding the fish.

The fish only needs about 5 min until it's cooked, and the shrimps only 2 min, so put them in last.

 

Tip:  While the soup is simmering, cut up the fish in small pieces.

 

This is all there is to it!  I like to serve this soup with a nice bread and chilled white wine.
